KENYAN KEBAB KICHAKA STYLE

Kebabs are various cooked meat dishes, with their origins in Middle Eastern cuisine. Many variants are popular around the world.   INGREDIENTS: 300g of minced beef 1/2 a cup of bread crumbs 1 cup of chopped spring onion 1 red onion, diced 1/2 a cup of dania stems 1 teaspoon of black pepper 1 teaspoon of cumin 1/2 a teaspoon of thyme 3 eggs 5 cloves of garlic, minced PREPARATION: put the onions plus dhania stems to cook. Once softened and fragrant. I used two kinds of onions since they pack a load of flavor. Spring onion are what our grocery refer to as kitunguu matawi and you can very readily get locally. Once done, remove from heat and set aside. In a bowl, add the meat, followed by one egg (The other two will be used in the coating), breadcrumbs, the cooked onions, the thyme, cumin and pepper. FRIED ITALIAN SAUSAGE

Italian sausages, onion and peppers, it is a super-flavorful com fort meal, its an awesome meal for dinner, weekends, or game night party. INGREDIENTS: 1.Olive oil 2.Fresh Sausages 3.White and Red onions 4.Bell peppers 5.Garlic cloves 6.Salt and pepper 7.Chicken broth 8.Fresh herbs PREPARATION: Heat the oil in a skillet over medium heat. Add the sausage, and cook it for about 2-3 minutes until all the sides are brown. At this point, the sausage won’t be cooked through but we’ll be cooking it some more later. Remove the sausages from the skillet, and place on a cutting board to slice them. Set aside. Sauté the onions and bell peppers in the same skillet. If you need to, add more olive oil or even butter or ghee before cooking the onions and bell peppers. Add garlic and season with salt and black pepper and red flakes or other spices of your preference. Sauté the veggies for about 3 minutes. Pour apple cider or red wine into the skillet with the peppers and onions, and scrape the bottom

PORK STEW KICHAKA STYLE

  Pork is a type of white meat enjoyed among Kenyans both in hotels and homes. INGREDIENTS 500g pork cubed 1 large onion finely chopped 2 gloves of garlic grated A bunch of coriander leaves 2 Royco cubes 1 teaspoonful of oil 3 large tomatoes peeled and chopped Salt to taste PREPARATION Place the chopped pork in a Sufuria or saucepan and place on medium heat. Add a teaspoonful of cooking oil and fry the meat until it turns golden brown.  Drain the excess oil into a container leaving only a half teaspoonful. Add the chopped onions and stir for 2 more minutes and then add in garlic and continue mixing for another 2 minutes. Add the chopped tomatoes and stir in between until all the onions are crushed forming a thick sauce. Sprinkle some salt and Royco cubes and if you like chilies, this is the time to add some. Add a half Cupful of water and reduce heat. Let it simmer for about 5 minutes or until the meat is tender enough according to your liking. Turn off the heat and add coriander and m

BUGERS KICHAKA STYLE

  The classic burger is an all time BBQ favorite ! This super easy homemade beef burger recipe gives you delicious patties, packed with onions and herbs for extra flavor, that are perfect for topping with cheese, lettuce and tomato, and sandwiching between floury buns. INGREDIENTS: ½ tbsp. olive oil 1 onion, peeled and finely chopped 1 x 500g Beef Steak Mince  1 tsp mixed dried herbs 1 egg, beaten 4 slices mature Cheddar (optional) 4 white rolls few round lettuce leaves, torn 1 beef tomato, sliced ketchup, to serve (optional) PREPARATION: 1 Heat the olive oil in a frying pan, add the onion and cook for 5 minutes until softened and starting to turn golden. Set aside. 2.In a bowl, combine the beef mince with the herbs and the egg. Season, add the onions and mix well. Using your hands, shape into 4 patties. 3.Cook the burgers on a preheated barbecue or griddle for 5-6 minutes on each side.
